Recipe of the Month: Cowboy Caviar

It’s summer time and for many of you, that means lots of backyard BBQ’s and parties to attend (at least that’s what summer means for me). If I’m not hosting, I always want to bring a healthy dish, just in case I can’t find something that meets my needs. This month’s recipe is a southern favorite, adapted to be a bit healthier but equally as delicious! Make this for your next BBQ and everyone will be raving. I guarantee it.

 

 Cowboy Caviar

Total Time: 1 hour 20 minutes

Servings: 12 servings

 

Ingredients:

  • 1/2 cup olive oil
  • 4 Tbs. sugar
  • 1/3 cup white wine vinegar
  • 1 teaspoon chili powder
  • 1 teaspoon salt
  • 1 cup chopped cilantro (from 1 bunch)
  • 1 pound Roma tomatoes, seeded and diced
  • 1 (15 ounce) can black-eyed peas, drained and rinsed
  • 1 (15 ounce) can black beans, drained and rinsed
  • 1 (11 ounce) can corn, drained
  • 1 red onion, diced
  • 1/2 cup diced green bell pepper
  • 1/2 cup diced red bell pepper
  • 1 jalapeno pepper, diced (optional depending on whether you like heat or not)

Directions:

  1. Combine first 6 ingredients in a small bowl. Whisk until blended.
  2. Mix the remaining ingredients in a large bowl. Pour the sauce and mix well.
  3. Refrigerate for at least an hour.
  4. Serve with tortilla chips, Triscuits, on top of a salad, tacos, or just eat it on its own!
