Monthly Recipe: Froyo Bites
The warm summer weather always brings about a craving in everyone: ice cream. Ice cream is the American summer icon. You can’t go a summer without it. Unfortunately, ice cream comes with a lot of sugar, fat, and calories which can wreak havoc on your waistline and health.
One of the most common questions I get asked is what can I have for a sweet treat that is still healthy? In the summer time, homemade frozen yogurt treats are a must. You don’t have to feel guilty about having a little frozen yogurt and fruit. Below is my favorite sweet treat during the summer:
Froyo Bites
Yields: 6 servings
Ingredients:
- ¼ cup sliced almonds
- 1 tablespoons coconut sugar
- 2 tablespoons coconut oil, melted
- ¾ cup plain Greek yogurt, nonfat
- 2 tablespoons honey
- 1 ½ cups fresh chopped berries or fruits of your choice
- 6 cup muffin tin and liners
Directions:
- Line a 6 cup muffin tin with silicone or parchment cupcake liners, or add directly to nonstick muffin tin.
- Add the almonds, coconut sugar, and coconut oil to a food processor. Mix until almonds are crushed and well blended.
- Spoon a small amount of the almond mix into the bottom of each muffin cup.
- In a medium bowl, mix together yogurt and honey. Spoon 2 tablespoons into each muffin cup, covering the crust.
- Top with freshly chopped fruit.
- Freeze for at least 2 hours before serving.
